CRAZY for CRAISINS!!!!


Stupid little Craisins.

I added some to my salad to "liven" it up so to speak (I'm so sick of salad with vinaigrette) and now it's all I can think about. 1/8 of a cup is a point. Which isn't that bad, but it seems like by the end of the day I have nothing left! And you can eat an entire cup of carrots, or an apple for a point, so it really doesn't make much sense to eat that little tiny bit of sweet little yummies.

plus they are RIDICULOUSLY expensive.

No more Craisins after this bag is gone. But I'm going on a quest for new yummy salad stuff. It's my mission this week. To find the perfect low point salad.

Here is the recipe I used,except I used instant white rice. The way to go would be brown rice, but I had none.

This is 4 points for 1 cup.

Mother's day dinner


Mother's day was a complete disaster. We were sick, either stuff coming up or going out too fast the other way. So Mother's day has been moved to Thursday. I've been feeling better though and decided to pull out a freezer meal I made a couple of weeks ago. I love having these freezer meals ready if I don't have time to cook. I'm very glad I did them and can't wait to cook some more.

I need to fine tune this recipe. But basically I thinned out chicken breast with a mallet. I creamed together low-fat cream cheese, green onion, lemon and garlic. Then layered fresh spinach, fresh basil leaves, and the cream cheese. Rolled them up and baked them for 45 minutes covered. Then 10 minutes uncovered. I don't know the points value of this. Like I said, I'm going to make this again with some changes and figure out the points.

I served this with cilantro lime rice and fresh salad with walnuts and Craisins.

If I would recommend you to invest in the stock market, I'd say to invest in the Pringles company, cause I'll be buying these quite frequently.

They are made with Olestra oil. Which I think is the stuff that gives you diarrhea if you eat too much. So that's what's awesome, you can't eat a lot of them anyway. Or you might poop your pants.

I said poop.

Nacho every day craving

Most women have an easy way to deal with stress of everyday life. What's better than chocolate to calm a mother. Forget about that dirty laundry and 3 hours of homework about mathematical equations that we never actually needed EVER but have to pretend for the sake of the child so they themselves don't go insane.

But then they decided to take chocolate and insert it into another stress reliever...

I know. I know what you are thinking. Your best buds ever.


That's right. Ben and Jerry. Are you drooling yet?

You know what? It does nothin for me. Doesn't get me excited by the smallest little bit. Chocolate fudge brownie ice cream. Chocolate, yes. Heck yes. Fudge, oh give me fudge and I might pounce. And brownies...brownies with walnuts...I'd cave in a minute. Well, seconds.

But then you stick the whole thing together and ruin it...by adding it to ice cream.

BUT, I'm not saying I don't have my own thang.

So I did a little research about Doritos.

Turns out Doritos in Spanish means...

"Little bits of gold."

Day five and kickin trash.

I've been back on track for five days now and I have that feeling of empowerment back. In the past weeks I've felt angry, mad, frustrated, sad, but mostly scared. The weight comes back so so so much faster than it comes off.

Totally. Not. Cool.

I woke up this morning sleepy, for no good reason at all. But I found the whole day that I was cranky and just wanted to eat eat eat. But I didn't, I stayed within my points range. I have always known (and you do too) that I am a stress eater. But apparently I also turn to food when I'm tired. I even tried a nap. And I really wanted a 44 ounce diet Dr Pepper but I've even been limiting my diet soda intake. I'm actually drinking a cold glass of protein water for dinner.

Apparently someone came up with a name. Milk. Who knew?



Seriously though, when you are counting every point (or calorie for those of you not familiar with Weight Watchers) you have a tendency to use those two points for something else...like cheese, or meat, or chocolate. You know something you can chew. But our family has committed to milk with dinner every night. I miss my diet Pepsi, but this makes me fuller, less bloated and gassy and when I'm 65 hopefully I won't look anything like this due to Osteoporosis.
Future Jeannie...

She's shaking her fist because it's 2045 and no one has come up with zero calorie chocolate yet.

So try a cold glass of milk with dinner tomorrow night. Its good. Seriously. Cause if you drink it you could look like this...

Creamy Chicken salad


I decided to create a healthy version of chicken salad. I recently had one that was so yummy, I tried to mimic it. I think it turned out so good! This makes enough for 3 if you add a lot of lettuce and tomato. It's 3 points per serving before the bread or tortilla.

3 ounces of cooked chicken
1 ounce cashews
1/2 cup grapes
1/2 cup celery
1 tablespoon of diced onion
1 tablespoon mayo made with olive oil
1/2 teaspoon garlic powder
lettuce
tomato
whole wheat bread or tortilla

I'm back

Well, I've been on a couple months vacation from blogging, and unfortunately watching my weight. I've gained a bunch back (I'll get it posted as soon as I can). It's depressing how fast it comes back on. ): I got bored with blogging but I think I'm going to turn this more into a personal overall blog. Maybe including more recipes, crafts, this and that. And I'm sure lots of whining. Cause that's what I created it for in the first place.
