Mother's day dinner


Mother's day was a complete disaster. We were sick, either stuff coming up or going out too fast the other way. So Mother's day has been moved to Thursday. I've been feeling better though and decided to pull out a freezer meal I made a couple of weeks ago. I love having these freezer meals ready if I don't have time to cook. I'm very glad I did them and can't wait to cook some more.

I need to fine tune this recipe. But basically I thinned out chicken breast with a mallet. I creamed together low-fat cream cheese, green onion, lemon and garlic. Then layered fresh spinach, fresh basil leaves, and the cream cheese. Rolled them up and baked them for 45 minutes covered. Then 10 minutes uncovered. I don't know the points value of this. Like I said, I'm going to make this again with some changes and figure out the points.

I served this with cilantro lime rice and fresh salad with walnuts and Craisins.

Sorry you were not feeling great for MD. That dish looks delicious!can I be a pain and ask for the rice recipe?
